Herbs and spices have been used since humans first started cooking - a long time, and they are used widely today, as well as an infinite number of variations, combination's, and quantities. Herbs and spices also provide a wide range of nutrients and phytochemicals (plant chemicals) that can help prevent disease and contribute to better health. As multiculturalism increases, modern Australians are trending toward using an array of herbs and spices traditionally used in Mediterranean, Middle Eastern and Asian cooking, but increasingly, Australian native herbs and spices are also being used in many modern recipes.
